A little wine info to start this note, 100% Erbaluce, 68 months spent on the lees, zero dosage and incredibly limited production of only a few hundred bottles.
On the nose we have white spring flowers, candied pineapple, plum squeezed on granite and fresh honeycomb.
On the palate we have ultra pure lemon peel, yellow apple peel, fresh woodland stream full of minerals, yeasty bread dough just proofed and ever lingering granite-like mineral texture.
Finish is intense and long, fun bottle, constantly changing as it warms and opens. I'm not keeping any stopper in this bottle in between pours. Similar to a Champagne, but also distinctly different.
