At first it smells and tastes only of natural wine. It took over 45 mins for most of the funk to dissipate, though still not entirely at that point you get some interesting stuff, zippy raspberry and an iron-like mineral core that punches above its weight. I don’t have the patience for it as it stands, but it could be really great if made cleaner or, more realistically, with more SO2
