For #AgedWineTuesday here is a delicious Cabernet Sauvignon.
Dark ruby in color with a brick/ orange rim.
Great nose of blackberries, blueberries, light vanilla, oak, vegetables, herbs, spices, dark coffee, pencil lead, earth, graphite and peppercorn.
Medium plus in body with medium acidity and long legs. Very smooth.
Dry on the palate with blackberries, black currants, vegetables, cedar, leather, earth, light vanilla, tobacco, peppercorn, espresso, chocolates and vinaigrette.
Long finish with round tannins and tangy raspberries.
What a great surprise this is. This 28 year old Cabernet Sauvignon from Napa Valley is drinking very nicely now. Well balanced with a great mouthfeel, smooth and elegant.
It was served blind, and after 90 minutes in a decanter it felt like a Left Bank Bordeaux, but I wanted to see what it does with some more air time before I make the call. After 3 hours in the decanter, my call was Napa Cabernet 1995. Pretty happy with my call. So nice to see the progress with these kind of special wines.
After 5 hours of airtime, big grippy tannins come out. This has still many years in it. Showing great complexity at this point. Just gorgeous and delicious.

A blend of 88% Cabernet Sauvignon, 6% Merlot and 6% Cabernet Franc. 35% of the fruit comes from the To Kalon Vineyard. Unfined and unfiltered.

Second bottle consumed within 2 weeks. Both were perfectly integrated. Still had fruit showing and both opened for several hours.

Don’t think it could have lasted much longer, opened it a good 2 hours to let it breath. Ripe fruit, tannins on point, and nice smooth long finish.

Another gem from my Dad's DRINK NOW selections. This one smelled like jet fuel out of the bottle, but is still really put together and delicious after a few min. Was not expecting that. Well done Bob.
