The nose is a beautiful balance of floral and red fruit, almost pinot-noir like, with notes of rose and candied raspberry. Unlike other Cerdon, the sweetness is dialed down, but the fruit is still ripe, rich, and we’ll balanced, with an awesome underlying minerality. This is by far my favorite Cerdon.

Methode Ancestrale, 60% Gamay 40% Poulsard. Has an earthy component that wasn’t in the Initiale, probably die to the high percentage of Poulsard. For me, an excellent choice for Thanksgiving. Ripe red berries, wet dirt, low alcohol and bubbles. Only 8% ABV but drank pretty dry. Darker in color then some other Bugey cerdon that I have had. Can get significant bottle variation with these.
