Thanks Gary Westby, this was our dessert last night, paired with a lemon soufflé. Then capped off with Mezcal. Oof.

Like the roast chicken, the sashimi bowl is easier to prepare than it is to perfect. The "vigneron" was a great accompaniment, with vivd chalk and bright white fruit. This is half each Pinot and Chardonnay and based on 2008, with reserves going back to 1997.
