Delightful bright acidity, a touch of minerality and great complexity. Hazelnuts, bitter cocoa and baking spice. Under ripe pear adds to the acidity. Green fruit peels, add an almost perfume note. Long dry finish. Pair with a squash soup (no cream!) truffle oil, and a pecorino crisp
