Gimonnet's Paradoxe features Pinot Noir two-to-one over Chardonnay. The result is an abundance of all things cherry, and most notably the pit. But cherry is only first layer of this jawbreaker of a Champagne. An enormously complex briny, flowery, yeasty, nutty, citrusy, umami, minty, toasty, creamy, peachy, and funky bubbly.

Birthday bubbles to commemorate the twins' fourth birthday-
Me: "We have historically significant champagne tonight! This bottle was disgorged in October 2011!" Father: "Disgorged in October 2011, just like pregnant you!"
