Gimonnet's Paradoxe features Pinot Noir two-to-one over Chardonnay. The result is an abundance of all things cherry, and most notably the pit. But cherry is only first layer of this jawbreaker of a Champagne. An enormously complex briny, flowery, yeasty, nutty, citrusy, umami, minty, toasty, creamy, peachy, and funky bubbly.

Forward, fresh, crisp. I was expecting a little more flesh and density. Must be all that CH in the blend. Somewhat linear. Juicy and upfront palate followed by a mineral and textural finish. Bosc pears, apple skin, chalk, a little toast, starchy. 52% PN 48% CH 10/2014 disgorgement.
