Jan 11th, 2021Pax Cuvée Christine, Sonoma County 2003. Recently started drinking Pax, but this is my first with good age. 16 years but still opened pretty tight despite decanting. Beautiful nose with lots of leather and mushroom. Great earth on the palate, with some dark red fruits and some dried red and maybe some red stone fruits. Served with Shepard’s pie, hen of the woods mushrooms, bucatini with lamb ragu, and broccoli rabe. Still remarkably young, but mellowed with some air.
