2h decant. Shows that cut garden hose note. Iron & Bramble. Taste is underwhelming for a Pax. I wanted meaty funk. I got diluted creme de cassis. Lots of structure remains.

Another killer effort from @Pax Mahle Deep rich purple. The nose is chocolate and olive and blackberry. The palate is full and Rich with black cherry and chocolate. This finish lingers for a minute plus. Medium acidity and tannins still present but well integrated. Just another solid wine.

Amazing wine that still needs a lot of time. After 3 hours it was more open. Nose is perfumes flowers, plums, cherries, herbs. Palate is big but very well balanced. Huge dark cherries with tart finish. Some cedar, plums, hint of spice. Lovely. I’d like to get another bottle to open in 10 years.

Hidden at first, a 2 hour decant unveils a strong beauty. Aromatics lift almost effortlessly carrying roses, dark fruit jam, blackberry pie, licorice, tar, and herb bouquet, consistent through to the long finish. Great structure, light tannins, and a solid acid backbone pair this well to the right dish. Makes you want to eat a great stew in the forest on a fall day. We just skipped the forest part.
