This bottle was OK, but not up to the level of the last local crab that we brought back from the docks at Princeton by the Sea. Clean, good acidity, but rather boring... At least it didn't encourage me to drink to much.

Really interesting Chablis... A complex and evolving wine. It has a weight and roundness to it, hinting at brown butter and buttered popcorn, but still expressing the trademark chablis acidity. Crushed oyster shells and salinity mix with Meyer lemon, chervil, dill, and white pepper. I'm sure I could continue on with all of the descriptors if I didn't end up drinking it so quickly. It went very nicely with the plate of chèvre, Brie,manchego and crudités.
