Opens with matchstick reduction which (with 1h decant) turns into seductive lemon tart, quince gelèe, with some marcipan in the background and a whiff of salty caramel. On the palate this is defined by the pure lemon fruit acidity, with a sweet pastry roundness and a mineral finish. This is surprisingly complex & serious. And good. Very good.
