Perhaps the most surprising and fantastic food/wine pairing of my life: 87 Joly CdS and a Niman Ranch bacon sandwich on potato bread with a spread of Mayo as thick as my head felt this morning after a dinner with a legend. The acid in this 1987 made German Riesling seem as alkaline as lye. It shook the bacon from the inside of my cheeks and concentrated its intensity on the middle of my palate. It made the bacon more bacon. It's 28 years old. Bad A :-)

На старте в первом носе немного странные химические тона хлорки и чистящих средств, которые позже сглаживаются и проходят. За ними проступают ноты саке, джина, можжевельника, крупной соли, тончайшая ацетоновая летучка, незрелый белый персик, сухая цедра лайма, мелкие белые цветы, полынь. Среднее тело с уверенной кислотностью. Стройно, в меру напряжённо, почти вертикально, с бодрым тонусом и не совсем типичной органолептикой. Больше интересно, нежели очаровательно.

Holy crap, this thing has not aged a single bit. Timeless acidity with a mean phenolic edge to it! Still quite austere, many more decades for it to open up!
