Wine number 500! It is my Wife's birthday, so it calls for Champagne! Classe M is 7 year old NV champagne - elegant and a great ambassador of Reims. Bright baked apple core, lime zest, lemon sorbet, brioche, clover honey, honeysuckle, dried pineapple, tangelo, chalk mineral - golden color, medium bodied and medium plus fine bubbles, exhibiting both signs of maturity, yet the zing of youth that shows promise for further maturation. This is easily one of my favorite champagnes, and received a 92 point critique on Wine Spectator.
Michel, the winemaker was an incredibly nice man when I met him, in his 80's, still keeping tradition alive.

I like writing about the wines I experience because it helps me solidify the moment in my memory.. but I also like to write to learn better how to describe wine to others, as it is a passion of mine. Thanks to all who have shared their knowledge to me and opinions as I continue to explore the world of wine.

What a lovely champagne. Every time I drink it, there's something new I love about it. This time it's the freshness - aged 7-9 years on the lees, but still as light on its feet as ever. Some nice mellow lemon curd on the palate, which provides lift, while the nose has great elegance and notes of caramel and freshly baked biscuits drizzled with honey. Bright, citrusy, mineral-laden on the finish. Pairs beautifully with this coconut cream pie. Heck yes. 50/50 chard/PN.

Classe M is outstanding! Aged 7 years on the lees (dead yeast cells)..to put it in prospective, the minimum aging requirement for a N.V. champagne is 15 months total, and a vintage champagne is 3 years.. this N.V. has been aged double the amount of a normal vintage champagne! Meaning that aside from how wonderful it is drinking now, this one will continue to develop in the bottle, releasing more and more of that very bisquity house style. Classe M was very full in body, very vibrant with golden pear and apple pie notes, with toasted walnuts and lemon pastry notes. Has to be probably the sub $100 bottles of champagne one could purchase, as well as probably one of the best bottles I've had the pleasure to drink. Enjoy now through 2022!

Decent champagne. Nice flavor. Dry but not extra dry as it proclaims. This is good for those who want a champagne to make mimosas. Not that great if appreciate a very dry champagne.
