Last bottle maybe 3+ months ago was super closed. Not this one. A nose of gorgeous brioche and some toastiness. Really nice mulling spices and some fruit I can’t quite identify. Also maybe some fresh baked dough? Not phyllo. But maybe phyllo? Gorgeous inner mouth aromas and such wonderful freshness. So sappy and pure with just unreal persistence. The wine just takes over your mouth. But it also finishes so savory. It’s remarkable. Maybe some florals on the nose as well as it opens. The mousse is so fine and my goodness this is juicy and the finish just has ripping minerals. It almost had a tannic like finish to it and it created a tactile sensation. The nose now is a spice bazaar of complexity. A dizzying array but it had a significant bazaar type of aroma. The nose is a 9.6 or 9.7 now after some air. It’s so juicy and sappy and approachable but still has length, acid and richness (18) without being anywhere near basic. Really salty finish..

May 25th, 2024This is 67% pinot and 33% chardonnay and Brut Nature. Deep nose of wet earth and wet stones, wow, so expressive, some wonderful apple fruit (mulled apple spices and also exotic spices) super deep and complex nose, deep ocean as they say. baking spices and so much nuance and different smells. vanilla extract and maybe coffee beans, airy and saline, hickory, fine fine mousse, really harmonious, so vinous and juicy, almost like actual wine as mousse is so fine, juicy and explosive apples and spices and very very serious mineral cote, and unreal sapidity and echoes of apples and baking spices. So so insane. 9.6. terrific inner mouth aromas. apple and cherry fruit, vinous and bubbles, wonderful.
