As it opens up the secondary aromas of lees and tertiary aromas of ethyl acetate or oxidation from the bottle aging really appear. It's a fine cava, but it doesn't jazz me. The acidity and the dryness seem uncomfortably unbalanced with the body and texture. It's bone dry and oxidized. It's like a sort of sparkling Manzanilla. I'm exaggerating but almost true.
