Hillstone Vineyard Cabernet Sauvignon

Napa, power, ripe fruit.

2007. Wow.

Finds a good balance between ripe dark fruit and its structure. Very good in its style.

Massive wine. Lots of dark fruit, plush red tire, and sturdy tannins.

Comfort wine. In a great place. Velvety, dark fruit, soft tannins.

This is polished and rich (very nice with grilled burgers). Some dark chocolate and dark fruit. Very well done.

Deep earthy core. Still pretty tannic though the fruit makes it accessible. If I had more I'd cellar them. Complex.

Same comments as before. Such a unique wine. Drinking very well now, almost pnp. Blue and black fruit and a bit of black licorice. Tannins are velvety smooth. Short-medium finish.

Big fruit. Plum and blueberries, black licorice, spirited, dark chocolate, espresso bean. Inky purple color. Tannins already velvety smooth. High alcohol levels really obvious. Unique flavor. I like it, but don’t think I could drink it too often.

Let it open for about an hour. Perfect big fruit powerful wine for a huge ribeye and potatoes.
