Tequila, lime and salt - minus the Tequila. That's Pigato, also known as the Margarita of Italian whites. Shares DNA with Vermentino, but I have not ever tasted a Ligurian Vermentino that has such ample lime and salt character.

Feels very advanced (maybe cause of 375 format?) but in a really cool place because of it. Honeyed quince and hazelnuts, very fleshy palate, but still retains that jolt of salty acidity.
