The nose is very flinty with crushed oyster shell, wetstone, gun powder. There is not much fruit there and it's showing a bit of reduction. The palate is very well made, with a some acid drive, not too strong, some width and chalky mouthfeel, some light green apple and citrusy touches, a bit of grip and a rather long finish, with good freshness, a tiny bitter note and some very light salty touch. We paired it with an oven roasted pair of see breams and parmegiano-sprinkled zuchinni fries. Great pairing but the wine is not giving much tonight. It's even more textural and less aromatic than usual.
Thinking back on it, I believe the bottle was flawed as there were some very off notes.

I just unlocked a new terrific pairing I didn't think would work ever. This simple Chablis and light soy sauce. It works incredibly well together! There is something about the texture and the saltiness of sauce that is well complemented by the minerally structure of the wine. I'm amazed! I had this along veggie Japanese gyoza and light soy sauce.
The nose is textbook chablis: lemon, lemon curd, chalk, even some pineapple notes pop up here and there. The palate is light, with some juicy lemon touches, a great acid drive, some good grip and a lemony, lively finish that lasts for a while. It's a coop but they work very well. A very reliable source, and an affordable one that is, for every level of Chablis, from petit to grand cru..

Soft, light not overly dry or sweet. A bit sour maybe the green apple note. I drank it with tartare and salade work out well.

The palate is well balanced with a strong acid backbone, some width and a delicate mouthfeel, lemon and pear on the sides, and a very long and nice fresh, lemony finish. This is once again very well done. La chablisienne might just be the best wine cooperative venture in France. This is tasting better than lots of premier crus from lesser, not as dedicated producers.

Fresh, mineral, some hints of smoke (wood) - viscous, short. Forgettable. The type of Chablis that made me uninterested in Chablis for a long time - until I got a chance to discover the fantastic wine it can be in the right hands.

Surprisingly acidic with some minerality. Paired with red garoupa. Should have paired it with the Azabu sake instead.

Chalk and rocks on the nose. Very mineral. The palate was wide and typical with good acids, lemon on the sides, and a quite long finish with white flower.
