Sep 12th, 2018Absolutely crushable. Good acid, but enough body to go with many types of food. Hints of cherry and cranberry without being overly tart. Take it to the patio solo or even bring it to the Friendsgiving table. Thirst-quenching.
Found it to be an absolute perfect pairing (i.e. both taste better) with Cacio e pepe made with parm or at least half parm rather than pecorino.
