Popped and poured; enjoyed over the course of 90 minutes. The wine pours, a deep, ruby color with a dark but transparent core; medium viscosity, with very light staining of the tears. On the nose, the wine is youthful with notes of ripe red and some black fruits: raspberry, strawberry, blackberry, red flowers, licorice, warm, spices, and minerals. On the palate, the wine is dry with medium tannins and medium+ acid. Confirming the notes from the nose. The finish is medium. To palate, better after 2030 and through 2045.

Paired with the fourth course, Côtes de Bœuf, and this is a classic pairing. A finely structured N-S-G and perhaps a touch too young yet? Regardless, it was a fantastic compliment to the beef. I think time will coax more out of this one.

Our third vintage at Fairchild. Not my favorite of them as a bit less fruity

Suis bois and spice on the nose, leading the way for anise-laden berry fruit on the palate with hints of cola and cedar. Delicious and aromatic.

2006 Premier Cru, Les Vaucrains. In the 2006 vintage, the vines were still young (maybe 15 years old). Clearly shows the strength of the site, but not the depth of older vines. Nice nose, with some mushroom and dark fruits. A bit of alcohol on the palate. As the wine evolved, lost some complexity but did get more red fruit; again a sign of the age of the vines. Threw some fine sediment.
