Nose has cooled lemon curd, light apple cider vinegar, cold pineapple, moist moss, oxidized green apple slice, damp clove and very wet grassy notes.

Palate has pineapple core, bruised green pears, faint lanolin, light honey notes, light under-ripe yellow peach and white waxy notes round out the finish.

Double decant with 12H rest. A Saint Aubin for the trending natural wine crowd without being over the top 'natural'. 92-93 Points.

Paired to a grilled slab of Steelhead Trout, perfection.

24H Update:
Nose has fresh green apple peel, warmed yellow apple slice and white waxy notes.
Palate has warm pear, slight honey and under-ripe pineapple.
Much improved; Score change 92>93.

The final St. Aubin from the master. He’s hanging it up and it makes me sad. What a nose. Just the most inviting white burg one can imagine. It smells like a scene in nature. Some herbs. Some forest. Some moss. Some soil. Some stones. Some green apple. A medley of spice fights through after a few minutes. More green apple. Middle eastern spices like cardamon, curry and clove. Maybe white pepper as well. The palate delivers and more on the promise of the nose. Amazing power and depth. Prodigious sap and purity. Dreamy but substantial structure. Terrific length and texture. So so long and intensely mineral. What a wine. Each sip is a total experience. Outstanding. Will age 15+ years. Has serious density and structure.
