La Graviere Côtes du Jura Chardonnay

Serious Chardonnay from a natural wine legend, and this is crystal clear, perfectly clean, and really really tasty. Laser focus and long finish. It’s a supremely elegant wine whose earthy, mineral backbone beautifully complemented a mushroom and asparagus risotto. Would love to taste this again in 10 years to see where things go.

Oiullie style. Tons of acidity and and mineral/citrus profile. Will hold for a while but is starting to round. Gave it a splash decant based on some things I read.

This is in the ouillie style. Very acid driven—almost too much so. Touch of citrus and very linear now.
