
Topped up Savignin, sitting pretty with some air, complex aromatics and flavors of dry citrus, spice minerals, ginger, rocks, dry florals. Highly recommend Le Timbre for lunch, will definitely go back for dinner.

Chardonnay and Savagnin, 50/50. Opened six days ago, it was a little tight but showing great potential in a compact state, an oxidative, lees infused elixir held together in a crystalline shell. Tonight it is much more expansive, lemon curd and hazelnuts, a fullness and complexity that seems to be unending. So happy for the experience.
