Ultra-fine, creamy mousse and tart, with searing acidity to balance the rich texture. Like biting into the perfect not-quite-ripe yellow plum. Some very pleasant autolytic character.
Very likely my favorite California sparkling wine I’ve ever tasted.

Way way smoke-y. Like sitting in front of a campfire. Too much for me. Baked apples, BBQ sauce, lemon curd.
