Ultra-fine, creamy mousse and tart, with searing acidity to balance the rich texture. Like biting into the perfect not-quite-ripe yellow plum. Some very pleasant autolytic character.
Very likely my favorite California sparkling wine I’ve ever tasted.

Holy flower garden! Tastes like rose water meets geranium meets honeysuckle with stone fruit thrown in. I know why they call it May queen. I can imagine this is what fairy dew drop water tastes like. Very good but wow is it floral.

Way way smoke-y. Like sitting in front of a campfire. Too much for me. Baked apples, BBQ sauce, lemon curd.
