I used to really hate the expression “it is what it is” but I find myself using it more and more of late.
The truffled steak tartare probably needs just a touch less rusticity and a bit more upfront fruit.

More vacation wine. Tart raspberries with smoke & mineral notes. Mild tannins & bright, fresh acidity frame the fruit. Very nice & easy to enjoy.
