Rich and sweet, with just enough acid to keep things reasonably in balance. Worked exceptionally well with the sheep’s yoghurt sorbet, lemon curd, buckwheats thyme merengue and native mint we had for dessert cleanser. Not sure if it would work quite as well on its own.
