This definitely tastes like a serious effort; focused, lots of textural and phenolic character, racy acid. I dig it a lot especially on day 2. The Burgundian approach appears to show well here and the wine offers more non-fruit character/intrigue. Crisp yellow apple, orchard blossom, tea leaf, green herb, saline, crushed white rock. Slight aldehydic note coming through on the finish that I don’t find offensive, I think it’s adding something. Curious how this will unwind given how coiled the palate is right now

First of the two Chardonnays from Hand of Fate Wines. Love both areas just like Adriaan and Lara! Medium pale yellow with a well rounded nose. Layered nose with a bit of creaminess from the lees, honeysuckle, white flowers, and a touch toasty. Medium acidity (6/10) and medium bodied. Quite a bit of citrus and stone fruit on the attack of the palate with a bit of butterscotch in the mid palate before a long and gravelly finish. Drink till 2022.

This is a beautiful wine-excellent balance, lovely acidity, an unusual and enchanting aromatic profile, with an enticing blend of minerality and white flower nuances that make this wine delicious as a stand alone wine, and a superb pairing wine with many cuisines, including French, Vietnamese, Indian and Cantonese among others. Leaving the bottle stoppered and half full in the refrigerator for two days to see how it holds up resulted in a slightly different aromatic profile that was excellent. Most wines don't hold their quality through that oxidative test, but this one did.
