Post fermentation, this wine sees regular battonage, a technique of stirring the lees, which adds richness and texture. On the nose, ripe pear, white flowers, anise and minerally overtones. Medium-bodied, yet nimble at 12.5% ABV, with notes of wet stone, lemon zest and chalk on a medium-plus finish.
