Lacked in the mid-palate when I opened it, but was considerably better about 3 hours later.

Took a good two hours of decanting to get it there, but what a payoff! Nomnomnom 🍷

Amazing red burgundy. One of my recent favorites. Delicate strawberry with some subtle fizz upon opening and long-lasting herbal notes. Very fresh and pure. Good right away but benefits from a few hours of air. Zero SO2.

Been saving this for a little while, but these days what are we waiting for really? No regrets... Delicacy and depth. Managed to make a mountain of Christmas cheese into an ethereal experience.

On any other night, this might have impressed more. Lacked the depth and structure of the other pinot noirs tasted.

This had a more of a savoury drive. Reduction when first opened, which gave way to some olive, meat, and mushroom aromas. Brett probably. Red fruits are apparent on the palate, complemented by a vibrant minerality. Some spice and herbs as it opens up.
