Yellow with slightly amber hue, Yellow apple, quince, mineral, salinity, steely, savory herbal note with oxidized note. Honey comb, peach bliss and bitterness finish. High acidity. What a savory sparkling chenin. I enjoy the fish very much.

Nov 7th, 2018As it is the slightly spritzy Vouvray Pétillant style rather than the fully sparkling Vouvray Mousseaux style, the mousse dissipates fairly quickly. It is, however, made via the Méthode Traditionnelle (Methode Champenoise) with secondary fermentation in the bottle giving it nice nutty, yeasty aromas and flavors to accompany the honeyed notes from the Chenin Blanc, and the chalky minerality. Winemaker François Pinon was a former child psychologist before taking over the estate from his father in 1987. This represents a wonderful bargain French sparkler.
