Now we're talking. Carbonic maceration on Pommard? WTF. I love it.

2011 Fanny Sabre Pommard. Way more stuffing, structure and tannin than last night's 2010.

Approachable 3 year old Pommard. Word? File this under glou-glou.

Lively, medium-bodied Pinot Noir by one of Burgundy’s leading natural wine producers, Fanny Sabre, a tiny estate of 4.5 hectares of vineyards scattered throughout some of Côte de Beaune’s great appellations, Pommard, Volnay and Meursault. This particular one comes from a plot with old vines in Pommard, an appellation known for its full, rich and concentrated Pinot Noir (perhaps due to the iron-rich soils). Aged for 15 months in French oak barrels. Quite perfumed, straightforward nose with ripe red fruit, underbrush/balsamic notes. Fruity, somewhat earthy and velvety.

Very soft and modest nose but this wine explodes on the palate with black currants, ripe black cherries, dried red roses, violets, tarragon. Tiny production from old vines, this is a rare gem.
