Honeydew melon, gardenias, wheat grass, almond milk, lemon pulp. Acid forward, juicy slightly oily texture, mineral/lemon tart finish.

Paired it with the squid and potato gnocchi bouillabaisse . It has a distinct limestone , lemon-y and interestingly five spice scent; the wine is medium body and alcohol, thyme, asparagus and almond after taste . The wine has a strong personality that would pair well with savory seafood dish. But not so much to sip on its own, IMO
