Domaine Paul Pillot
Bourgogne Chardonnay

Needed time for the reduction to blow off. Apple/melon fruit. A hint of oak char. Stony finish. Tasty. No rush.

This needs an hour of air and to warm up. When cold, the wood note is pronounced. With time and warmth the wood note mostly integrates. Lemony with hints of honey and minerality.

Roulot/Colin-Morey/Piuze school of high acidity/minerality and minimum oak influence. The 2018 vintage has less fruit but feels purer and finer than the 2017. Better than most 30 dollar Bourgogne Blanc’s that are either too austere or too oaky. Almost hits the target but not quite spot on, and maybe too subtle for most people.
