What a nose 😱! This is incredibly good. A very strong mineral scent first, like crushed oysters and chalk. Then comes elder flower and lemon. This is beautiful. I never had such a beautiful Sauvignon nose. The palate is very delicate and a little bit restrained at this point, even after one hour and half of breathing time. Very strong acid drive, a chalky mouthfeel with lemony, grassy touches that goes on for ever. Great tasting experience, would definitely come back to it a year or 2. It paired so well with lobsters!
