Pop and pour. On the nose: caramel, apple, a hint of lanolin, some soft mineral notes. On the palate: fantastic acidity, slate, apple, lemon oil. All the effervescence disappears on the pour, and leaves just a sparkle on the nose and palate. Lovely and elegant.

You either love it or you hate it. I happen to love it. Soft mousse, quince, soft bitter notes. Mousse was very soft.
