Caught this just before the precipice. Cherry pit, wet clay, and damp cinder block. Salty and savory with some secondary cacao nibs. Surprisingly still has some grip, but it won't last long. Distinctive, but notably natural.

This wine will forever remind me of my 6 year summer, and it's real good. If you haven't yet been to the Roussillon, go. Start at Collioures and head north from there. It's the Southern California of France

2011. With 55 day dry-aged ribeye at BoeufHaus. Decanted and opened up very nicely, its silky tannins and dark fruit paired very well with the steak.

Game and garrigue attack the nose initially but quickly gives way to very ripe, almost fermented cherry. The palate is savory with firm tannins and rosemary/garrigue notes. I admire the sturdy fruit. Decanted for an hour.
