Per Bianca of Paradis Books and Bread: This blend of Carignan and Grenache toes the line of red and rosé mostly because of it's pale color and zippy and grippy texture. The Carignan goes through only 2 days of whole cluster fermentation, which is genuinely short for red wine production. It is then submerged in already fermenting Grenache juice, pressed immediately then aged in barrel for 6 months, bottles unfined and unfiltered with no sulfites added. It's the quintessential Miami red wine, immediately thirst quenching and like a refreshing dip in the pool on a hot day.
