[Half bottle] This lovely 17-year-old Banyuls has finally knitted together into a very fine example of Dr. Parce Banyuls (old vine Grenache made in the same way as Port), earlier bottles were terribly disjointed and lacking balance and sweetness). Served with Viennese Sacher Torte my wife made for dessert!

Our first Dr. Parce was the 1967 “Vielles Vignes” which was fantastic and is still my reference point. We had that in 1987 at Pierre Gagnaire’s restaurant in St. Etienne, before he moved on to Paris, his staff was kind enough to comp us a bottle — blind — while my brother and I embarrassed ourselves trying to identify the wine!! That bottle was tried with Pierre’s famous “chocolate soup” dessert, the recipe for which was in Patricia Wells’ “Food and Wine Lovers of France” book from the mid-1980s — memorable combination!!!

Complex and delicious. Dried plum,, dark fruits, forest flowers. Not at all cloying. Very layered, with restrained sweetness, drying tannins.

After dessert wine. Lots of Port like qualities a bit of raisin and deep dark fruit, chocolate and a whiff of dried flowers. In my cellar since release.

[Half bottle] — this was lovely with a chocolate cake with raspberry sauce, though I’ve never thought this 2007 from Parce reached the heights of the Banyuls we’ve had from the 1960s and 1970s from Dr. Parce (the 1967 Vieilles Vignes being my all-time favorite).

Half-bottle, with German chocolate cake for dessert, maybe it’s still too young, but this 2007 cuvee has always seemed a bit unbalanced and hot, this bottle is now starting to show some nice balance, I’m hoping the other bottles will start showing better balance, encouraging!!

OK, match made in heaven -- my wife's homemade chocolate pate (RICH) and 2007 Dr. Parce Banyuls "La Coume" in split -- not as memorable on the wine side as the VV bottling, but chocolate pate is great as always (raspberry sauce on top).
