To me Chardonnay doesn’t do as wall as Savagnin in this style. The structure and definition are a little overwhelmed by the oxidative notes. Still fun to taste and quite profound but lacks energy.

Straight up umami on the palate: super concentrated, rich, salty, seashell, mineral, textured, delicious thing, with a loooong finish. So precise and balanced. Silly great value. Paired with leek au gratin and kale minestrone. Perfection.
