Delicious. The '07's are a little fat from dude, but not this one. That it was a magnum probably helped the freshness bit as well.

Cactus wax. Rich yellow sunshine tone. Spicy sweet floral figs. Cigarillo smoke. Anchovy, in the best salty umami sense. Bay and decomposing eucalyptus. Oily sweet richness to acid. Flinty minerals. Pickles (dill & shallots) and schmaltz richness. Captivating.

One of the domaines to NEVER leave me unsatisfied. 50+ year old chenin. Clay with flintstone on tuffeau. The domaine itself calls this 'sec'. I would call it the richest dry wine in France.

Striking out at Verre Volé after several wines, the first of which was Ganevat vinegar for $30+, "Rien que de fruit". This on the other hand was apple juice with som RS and little varietal character. I just can't get behind places that sport grand ideologies. However, the food we had was great and they really tried to please us with no pretense. So where to go in Paris?
