May 18th, 2013The nose shows a bit of green pepper bell, spice, cherries. The palate is very well done with a great acid drive, some nice cherry notes, a good width, gentle tannins that caress and a very long finish with cherries. It's rustic, simple and it paired extremely well with a piperade (local bask dish made of egg, bell pepper tomato and oignon, with slices of Bayonne cured ham)

Had this with dinner at the Chop Shop last night. Rich and earthy white that held up well against everyone's pork, fish, beef and veggie dishes.
