Denis (Isabelle et Denis) Pommier
Chablis Chardonnay
Gorgeous nose. Custard, apple skins, spice, minerals, oyster shells, very lean aromas yet also some gras. Terrific palate. Wow this has over-performed. Stunning clarity and purity. Crystalline purity. So balanced and fresh. Just awesome. Age transforms these wines.

Jul 28th, 2020Dinner with friends, prior notes still apply.
A Burgundy bin end theme for my bottles tonight, all are the last stock of the wines that have given us great pleasure in the prior 12-18mo. They will be missed, but not forgotten, new vintages will come eventually. 🤩

Easy-going, but loaded with Chablis character. Nose has brothiness and crushed sea shell minerality, but show ripe and pure peachy fruit underneath. In the mouth, it’s minerally, savory, and intense, but has decent balance, if not the demanding acids one usually expects. I guess with global warming those expectations will be changing, and soon.

Oct 23rd, 2019Nose has Atlantic Ocean wind, wet strawberry and green apple peel.
Palate has strawberry & yellow apple mash, crazy saline notes and great (medium) acidity.
I can't say how insanely aromatic this wine is, as I have mentioned numerous times, 2016 Burgundy IS the vintage to be enjoying and holding. Regrettably again, I didn't buy enough of this to keep me happy. Such a stunning Village wine.
