Well understood that these old defaixs show significant bottle variation. Slight nose with an initial burst of green apple and nutty oxidized notes. Very limited initially on the palate but giving way to more green apple, nuts, preserved lemon with a saline undetone@that is integrated and classix, although accompanied by a dry bitter note that indicates past peak. Refreshing and strong acidity, finishing with a surprising burst of energy. Pleasant, but underdelivers for location and vintage

Gotta love these late release Defaix, classic '02 richness, developed yes, but if anything can handle it its high acid Chablis.

By far the best wine at NEWTS tasting this evening. Great stuff, with a helping of buttermilk, daisies, honey; fine structure and delicate acidity. Just needs a few more years to shed the last tenets of greenness...
