Côte de Léchet Chablis 1er Cru Chardonnay
Popped and poured just below my cellar temp (which is currently at 59°F); enjoyed over the course of two days. Consistent throughout. The 2006 pours a reflective, straw color with silvery rim. Medium viscosity with no signs of particles or gas. On the nose, the wine is developing. Notes of lemons, limes, honey, cashews and oyster shell. On the palate, the wine is dry with medium++ acid. Confirming the notes from the nose. The finish is long and super chalky. This is absolutely killer Chablis that almost seems evergreen. Drink now through 2031.

Mar 22nd, 2021Blinded. The classic aromas were instantly revealing of the appellation, but the vintage was well-hidden behind the remarkable acidity. I felt the 06' exoticism was well-honed in here, which is perhaps a function of long elevage balancing any hint of fruit ripeness with layers of lees-derived texture. Intensely saline finish. Impressive and a strong case for long aging/late domaine releases.

Jan 7th, 2022This needs an hour of air to show itself. Initially this had a menthol note on the nose, but an hour later it was gone. Oyster shell, saline, tart, fresh and lovely.

Jul 9th, 2021Enjoying this way too much to write thorough notes. Creamed corn, golden delicious apple (fresh and dried), beeswax, chamomile, hay. flinty , saline finish. Fresh AF for an ‘06. Don’t want it to end. Had one of those food and wine pairing serendipity moments having this wine alongside maitake tempura in a ponzu dipping sauce where everything just clicked 🤯!
