Opened about an hour prior to service. The 2011 Chateau Simone pours a slightly turbid garnet color. Right off the first pour, this certainly isn’t faking the funk on a nasty dunk. Redolent of tart cherry, pomegranate, cranberry, cow pasture, red flowers, earth, mushrooms and grilled spiced meats. On the palate, the fruit and non-fruits are confirmed accompanied by stiff tannins and acid. The finish is long and satisfying. A wild yet charming wine. This was a fabulous pairing with grilled lamb chops. Drink now or over the next 5-10 years.

Cherry liquer. Red and purple fruit, some barnyard, mulberry and garrigue on the finish. Ripe fruit but lithe with fresh acid, very little extraction; prominent tannins (but not too aggressive). Almost reminds me of a ripe, herbaceous alto piedmont Nebbiolo. Fairly one note on the nose for now, just needs more time.

In some ways, Chateau Simone reminds me of some of the more austere vintages of Musar. Always a head turner due to its class. Lovely.

Holly decided to make cassoulet so this seemed like it would be a fitting compliment. Well, I’m here to confirm that the pairing was sublime. I poured this into the decanter about three hours prior to the meal and it probably could have benefited from even more air as it continued to improve in the glass. Red fruits and Herbs de Provence on the nose. On the palate it was crunchy red fruits, minerals and spices. Years to go. Drink with patience or hold.

Vintage 2001 - this is an elegant and refined Grand Old Lady! Its strikes me with its power. It flirts with red fruit impressions (strawberries). It smells like an autumnwood after rain. Its silky. Probably the wine was not intended to keep for 16 years, but with its tertiary tones its still vital. #provence #palette Mix of several grapes with mourverdre, cinsault, grenache. I drank it with a terrine of gamepaté, a baby chicken from the oven (poussin), stewed green cabbage and mashed potatoes. #simplepleasures
