Pancakes and Sauternes.
Two guilty pleasures.
Voluptuous nose on opening, wafting honey, beeswax, glue, apricotpreserve, molasses and that savoury twang I often pick up in mature Sauternes (something shrimpy/bacon-ey). Rounded and sweet in the mid-palate, getting more dry towards the finish which is starting to show a faint metallic note now, suggesting that this wine should be drunk earlier rather than later.
A very very fine example of aged Sauternes, though.

Nose shows slightly hesitant but well defined notes of beeswax, Grand Marnier, apricotjam, cooked ham, pepper, glue and orangeblossom. Darker candied citrus nuances on the palate, which is quite refreshing and certainly not too sticky sweet. An elegant mature Sauternes, well balanced, finishing nearly dry. Would make a fine wintertime aperitif!
