Elliott and I went to Paris for the first time, and this was a discovery from Verjus, which is now our favorite-ever tasting menu (it was our first dinner of the two week trip--of course!). On to the wine...this was electric paired my favorite seafood dish ever--seared scallops with fennel and potato purée and pickled radishes. Full of savory minerality, lemon zest, peaches, and a perfect structure, this is my new bar for Macon chardonnay.
