These folks are channeling an austere Chablis style. Super lemony with little fruit and intense mineralogy. Plus Some grippy tannins. And a slight TCA taint that ruined the effort.

Good bones here, but is drinking a bit disjointed. My first Ceritas, so don't know if it needs time to flesh out. Or if it needs more years under its belt. A nice Wednesday treat.

Oct 4th, 2021Pnp. Nice honeysuckle and a touch of lime. Revisited about 3 hrs later and the aromatics and palate came to life. More tropical notes and fuller texture. Acid is perfect right now for the amount of fruit. This bottling has at least a few more years.
