Smells like phyllo dough and lavender and maybe a hint of jasmine as @Josh Morgenthau commented. Guava as well but more like bitter guava. Really great other bitters as well. Palate is stunningly elegant and pure with lovely bitter notes and also tropical fruit notes and hints of pastry like croissant flakes. Lovely texture and richness and such length. Very very classy. As this opens it becomes fresher and the acid is more prominent as is the complexity!

Rich, waxey nose, with terrific granitic freshness. Really great minerals juxtapose with the richness. That’s what great St jo Blanc is all about. Some just ripened tropical fruits. Floral with air. White flowers. Palate is like icing on a cake. Ripe, so so mineral and textured mineralic freshness. Barely any fruit on the palate but a sense of engaging mineral sweetness. This is great. As it airs nose gets more complex. Palate is superbly elegant and so racy. This is a revelatory St. Joseph Blanc. Chewy and dense and almost tannic. Amazing energy and linearity on this. This is the white Rhone wine to give people who don’t like them. It has it all. Brilliant.

Lovely texture, richness without flab. Mineral nose, tropical fruit on the palate. The quenching freshness on the finish really takes this to the next level. Lovely.
